3 Recipes for a Delicious, Healthy 4th of July - Great for All Doshas!

Use these recipes for inspiration and adapt for what you have, buy a few new ingredients when you can and have fun cooking for taste and healing at home!

Peach Rosewater Lassi

This refreshing drink is great for any time of the day and is hydrating to boot!
The only thing you might not have in the house is rosewater or rose flowers you can steep. You could either harvest from your garden or simply make a Peach Lassi.

If you have rose petals/flowers, steep 2 T of petals/flowers in 2 cups of water for 6 minutes to make 2 cups of rosewater.

Ingredients (serves 6)
2 cups rosewater
2 cups (more or less to taste) plain water
2 cups tangy, plain, unsweetened yogurt (we use plain coconut yogurt and love it!)
3 peaches, stoned
½-1 tsp cardamom (optional)

Steps:
Put it all in a blender on medium until uniform.

Enjoy! Mmmmmm!

Fennel Caulikin Salad

Fennel and Pumpkin Seeds are great for digestion and can ease the gassier effects of cauliflower. Digestion is at its low point for  the year during the heat of summer, and this combo helps stabilize blood sugar (pumpkin seeds) as well as making the cauliflower more digestible. For added sweetness and texture, garnish with a sprinkle of fennel seeds. Bonus if you garnish with edible petals from your garden :) 

Ingredients (serves 6)

4 cups chopped cauliflower

1 tsp coriander seed

2 cups chopped fennel bulb

1 cup pumpkin seeds

Water to steam

Steps:

Toast pumpkin seeds (try baking sheet in the oven at 350 for 5 or more minutes) 

Steam all the other ingredients together very lightly. Should still have a little crunch :) 

Serve garnished with toasted pumpkin seeds

Enjoy!

Flavors/Qualities: Bitter, light, dry

Lemon Cilantro Bananas

The lemon (or lime!) and cilantro balance the kapha provoking effects of bananas perfectly for a peppy breakfast or dessert that will surprise everyone! 

Ingredients (Serves 6)

4 cups of bite sized banana chunks

1 cup finely chopped cilantro

Juice of a whole lemon  (~2-3 tsp lemon juice)

Steps:

Gently mix bananas, lemon juice and cilantro together with your hands so as not to bruise.

Enjoy!!!
